Venison has a slightly gamey flavour that’s really special – it’s rich and earthy without being overpowering, and it pairs beautifully with simple herbs and seasonings. Because it’s a lean meat, it cooks a bit quicker than beef, so you’ll want to keep a close eye to avoid overdoing it. But with the right approach, you’ll get juicy, flavourful burgers that are anything but ordinary.

Top Tips for Cooking Venison Burgers on the BBQ

Cooking venison isn’t difficult, but it does help to keep a few things in mind. Here are our go-to tips for making sure your venison burgers come out just right:

  • Add a touch of fat: Because venison is lean, we recommend mixing in a little pork fat or beef mince – around 10–20% – to help keep things moist and tasty.

  • Don’t overmix: Be gentle when combining your ingredients. Overworking the meat can make your burgers tough.

  • Chill the patties: Once you’ve shaped them, pop your burgers in the fridge for half an hour. This helps them hold their shape when they hit the grill.

For seasoning, you really don’t need to go over the top. A generous pinch of salt and pepper, maybe a bit of garlic powder, is all you need. If you’re feeling fancy, fresh rosemary or thyme works brilliantly too.

When it comes to grilling, make sure your BBQ is nice and hot and give the grates a quick oil to stop anything sticking. Because of the low fat content, aim for around 3–4 minutes per side – that should give you a juicy, medium-rare result. Cook them a little longer if you prefer, but try not to go too far or they’ll dry out.

Grilling Like a Pro

Want to take things up a notch? Try this simple trick: make your patties slightly bigger than your buns – they’ll shrink a bit while cooking. Then press a little dimple into the centre of each one with your thumb. This helps them cook evenly and keeps them from puffing up.

Resist the urge to press down on them while they’re grilling – you’ll just squeeze out all those lovely juices. Instead, follow this method:

  1. Place the burgers on the grill at a 45-degree angle to the bars.

  2. After 2 minutes, give them a quarter turn (without flipping) to get those classic grill marks.

  3. Flip and repeat on the other side.

Once they’re done, let the burgers rest for a few minutes. Trust us – this little pause makes all the difference, locking in the flavour and keeping them tender.

Time to Serve

Now for the best bit – piling your burger high with all your favourite toppings. A toasted brioche bun, some sharp cheddar, caramelised onions, a handful of rocket… maybe even a spoonful of chutney if you’re feeling bold.
