Next, pat your steaks dry with paper towels. This is an often-overlooked step, but it’s crucial. If the surface of the meat is wet, it creates steam when it hits the grill, and you won’t get that lovely, crispy crust we all love.

If you're using a gas grill, turn all burners to high and let the grill preheat for 10-15 minutes. For charcoal grills, wait until the coals are covered with a light layer of white ash.
You’ll want to set up your grill with two heat zones: one side should be really hot for searing, while the other side should be at a medium heat to finish cooking the steak. This way, you can control the cooking process more easily.

And don’t be tempted to flip the steak too often. Once is usually enough. That way, you’ll get a better crust and more even cooking.

When it’s time to serve, slice the steak against the grain. This helps break up the muscle fibres, making each bite much more tender.
