Celebrity chefs are known for creating unusual and complicated dishes, allowing diners to enjoy a new experience every time they replicate their recipe at home. However, a truly talented cook will be able to make even the most traditional meal refreshing, exciting and intriguing.
So let’s take a look at how some of the country’s best chefs are transforming our age old favourite – roast turkey.
- -Jamie Oliver’s Delicious Sunday Roast
If there is anyone who can revamp a classic dish, it is Jamie Oliver. That’s why his turkey roast was featured in his book Cook With Jamie, published as long ago as 2006. He revamps Christmas dinner by making a stuffing of fresh sage, pancetta, garlic, red onions, celery, breadcrumbs, apricots, minced pork, lemon, nutmeg and egg.
The turkey is cooked by piercing thighs and drumsticks and pushing pancetta rolled around a rosemary sprigs into the holes.
He claims: “This will give your turkey thighs a fantastic flavour and will keep them moist while they cook.”
Amateur chefs were also told to rub the turkey skin and spoon the stuffing between the skin and the breast before placing a large orange, which has been warmed up in a microwave, into the cavity of the bird.
A big fan of this dish, the Naked Chef said: “I always think that turkey’s not just for Christmas – in fact, done right, it rocks for Sunday roast.”

Gordon Ramsay is perhaps better known for gourmet cooking, with the celebrity chef having not one, but two Michelin-starred restaurants in London, as well as a host of other eateries around the world.
Therefore, his recipe for roast turkey is, as expected, refined. He adds flavour to the poultry by making a lemon, parsley and garlic butter and stuffing this into the loosened skin and in the open spaces around the bird.
He advises to fill the cavity with onions, lemon, garlic halves and bay leaves, placing more bay leaves under the skin of the turkey breasts. Ramsay cooks the turkey in a hot oven for 15 minutes at first, before layering bacon rashers over the top, basting it and returning to the cooker for about two and a half hours.

Turkey is really versatile and doesn’t just taste great roasted, as the Hairy Bikers have proved with their recipe for turkey and ham Christmas casserole.
The two Geordies claim: “This is a great way to use up any leftover turkey and ham at Christmas.”
As the topping is made from stuffing, it turns the casserole “beautifully crunchy and tasty”. So how do you make it?
They first create a stew of leeks, butter, flour, white wine, chicken stock and double cream, before adding in the cooked turkey and ham, along with tarragon, peas and spinach.
For the crusty lid, they make a stuffing out of breadcrumbs, onion, chestnuts, dried cranberries, dried sage, parsley and butter. This is then sprinkled on top of the hotpot and the whole thing is cooked in the oven for 25 to 30 minutes until crispy brown.
