We use heritage breed cattle such as Galloways and Short Horns. 

Brisket is often used for slow cooking methods such as braising, roasting, or smoking, which helps break down the tough connective tissue and renders the meat tender and flavourful.

When cooked low and slow, rolled brisket becomes incredibly tender and develops a deep, savoury flavour. It's a popular choice for traditional dishes like pot roast or Texas-style barbecue brisket, as well as for slicing thinly and serving as deli-style roast beef.

    Lovely piece of meat, made great pot roast with plenty of meat left over for next day

Characteristics: Tough, but tender and flavourful when cooked slowly at low temperatures

Best Cooking Methods: Oven 

Seasoning: Dry rub or marinade on both sides of the joint

Preheat: Preheat to 107°C for slow cooking

Cooking: Trim excess fat, place in roasting pan with sliced onion and garlic. Pour in 2 cups of beef broth or water and cover lightly with tinfoil. Cook for about an hour or until the internal temperature reaches 90-96°C

Resting: Let the joint rest for 30 minutes before slicing to retain juices

 

General Tips:

Resting: Always let steaks rest after cooking to allow the juices to redistribute.

Doneness: Use a meat thermometer to check doneness:

Rare: 49-52°C

Medium-Rare: 54-57°C

Medium: 60-63°C

Medium-Well: 65-68°C

Well-Done: 70°C and above

Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.
