Amazing Chili
Made a chilli with this in the slow cooker - it was delicious, tasty beef , nice texture - not stringy or tough
We use heritage breed cattle such as Galloways and Short Horns.
Chuck steak is a cut of beef that comes from the shoulder area of the cow. It's known for its rich flavour and relatively tough texture due to the presence of connective tissue and marbling. Chuck steak is often considered a budget-friendly option because it's less tender than other cuts of beef.
It's best suited for slow cooking methods like braising, stewing or pot-roasting, which help transform the meat into tender, succulent pieces that are perfect for comforting dishes like beef stew, pot roast, or chili. It's also a popular choice for dishes like carne asada or stir-fries, where slicing thinly against the grain can help improve its tenderness.

Characteristics: Tough and needs long, slow cooking but good marbling of fat through the meat, adding flavour
Best Cooking Methods: Pan fry and oven
Preheat: Preheat the oven to 170°C
Seasoning: Trim off any fat from the beef and season on both sides with salt and pepper.
Pan fry: Fry the steaks over a medium-high heat for 1-2 minutes per side, or until nicely browned, then transfer to a casserole dish
Oven: Add your choice of vegetables and stock to the casserole dish, bring to the boil, then cover the casserole and transfer to the oven. Cook for 1¼ – 1½ hours, or until the beef is very tender
General Tips:
Resting: Always let steaks rest after cooking to allow the juices to redistribute.
Doneness: Use a meat thermometer to check doneness:
Rare: 49-52°C
Medium-Rare: 54-57°C
Medium: 60-63°C
Medium-Well: 65-68°C
Well-Done: 70°C and above
Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.
