500g of diced beef shin offers tender, flavourful pieces ideal for hearty stews and slow-cooked dishes. Taken from the lower leg of the animal, beef shin is renowned for its rich, gelatinous texture and robust taste. When cooked low and slow, it melts into succulent perfection, infusing dishes with depth and savoury goodness. Perfect for comforting winter meals or any time you crave a satisfying, wholesome dish.

Best Cooking Methods: Slow cooking
Cooking: Oil the beef shin then brown in a frying pan over a high heat. Transfer the beef shin to a casserole dish or slow cooker and add stock or liquid along with your choice of vegetables. The liquid should almost cover the meat. Cover the dish tightly and cook in a preheated oven or slow cooker according to the recipe
General Tips:
Resting: Always let steaks rest after cooking to allow the juices to redistribute.
Doneness: Use a meat thermometer to check doneness:
Rare: 49-52°C
Medium-Rare: 54-57°C
Medium: 60-63°C
Medium-Well: 65-68°C
Well-Done: 70°C and above
Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.
