Fillet Steaks
My mate came round for dinner and what a treat it was to have a steak with so much flavour.
We use heritage breed cattle such as Galloways and Short Horns.
Beef fillet, also known as beef tenderloin or filet mignon, is one of the most prized cuts of beef. It comes from the loin area of the cow, specifically from the small muscle located beneath the ribs. This muscle doesn't bear much weight or do much work, resulting in exceptionally tender meat.
Beef fillet is characterised by its lean and tender texture, as well as its mild flavour compared to other cuts of beef. It's often considered the most tender cut. This premium cut is typically served as individual steaks, which are often cut thick and cooked quickly over high heat to preserve their tenderness. Beef fillet is also commonly used in dishes such as beef Wellington, where it's wrapped in pastry along with other ingredients.
2 x 200g steaks approximately

Characteristics: Lean, tender, and mild in flavour.
Best Cooking Method: Pan-Seared and Oven-Finished
Seasoning: Season with salt and pepper.
Preheat: Preheat the oven to 200°C. Heat a cast-iron skillet over high heat.
Cooking:
Sear the steak for 2-3 minutes per side until a crust forms.
Transfer the skillet to the oven and cook for an additional 5-7 minutes for medium-rare.
Resting: Rest for 5 minutes before serving.
General Tips:
Resting: Always let steaks rest after cooking to allow the juices to redistribute.
Doneness: Use a meat thermometer to check doneness:
Rare: 120-125°F
Medium-Rare: 130-135°F
Medium: 140-145°F
Medium-Well: 150-155°F
Well-Done: 160°F and above
Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.

Collect from the Farm, we are open around Monday to Friday 8:30am to 5:00pm Weekly nationwide delivery, arriving Thursday each week.
