The name "ossobuco" translates to "bone with a hole" in Italian, referring to the marrow-filled bone in the centre of the steak. Veal is the traditional ossobuco meat but our beef steaks make for a delicious alternative.
To prepare ossobuco, season the meat, dredge in flour, and then brown in a pan to develop flavour. Braise slowly in a mixture of vegetables (such as onions, carrots, and celery), white wine, and broth until the meat is tender and falling off the bone. The marrow from the bone adds richness and flavour to the sauce as it cooks.

Best Cooking Methods: Hob and pan fry
Preheat: Preheat the oven to 170°C
Seasoning: Season with salt and pepper
Pan fry: Fry the steaks over a medium-high heat for 5 minutes per side
Oven: Add the steaks to a cast-iron pan along with your choice of vegetables and stock, then bring to a simmer. Cover the pan and cook until the meat is tender, about 1-1½ hours
General Tips:
Resting: Always let steaks rest after cooking to allow the juices to redistribute.
Doneness: Use a meat thermometer to check doneness:
Rare: 49-52°C
Medium-Rare: 54-57°C
Medium: 60-63°C
Medium-Well: 65-68°C
Well-Done: 70°C and above
Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.
