We use heritage breed cattle such as Galloways and Short Horns.
Rump steak is a flavourful and relatively lean cut of beef that comes from the hindquarters of the cow, specifically from the rump or hindquarter area. It's known for its rich, beefy flavor and firm texture. Rump steak typically has a moderate amount of marbling, which adds juiciness and flavour to the meat.
While not as tender as cuts from the loin or sirloin, rump steak can still be quite tender when cooked properly. It's best cooked quickly over high heat to medium-rare or medium.
Rump steak is a popular choice for steak lovers looking for a flavourful and affordable cut of beef. It's a versatile option that can be enjoyed on its own or used in a variety of recipes, making it a staple in many kitchens around the world.

Characteristics: Tender with a deep, mineral savouriness
Best Cooking Methods: Pan fry
Seasoning: Season both sides with salt and pepper.
Pan fry: Heat a non-stick heavy-based frying pan over a very high heat. Turn steaks every 30 seconds to 1 minute so they get a nice brown crust. For medium, it should take roughly 4-5 minutes (or internal temperature of 60°C)
Resting: Cover in foil and leave to rest for 5 minutes
General Tips:
Resting: Always let steaks rest after cooking to allow the juices to redistribute.
Doneness: Use a meat thermometer to check doneness:
Rare: 49-52°C
Medium-Rare: 54-57°C
Medium: 60-63°C
Medium-Well: 65-68°C
Well-Done: 70°C and above
Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.
Enjoy your perfectly cooked steak!
