My son slow cooked these ribs to then make a ragu out of them. The final outcome was superb.
We use heritage breed cattle such as Galloways and Short Horns. Short ribs are a cut of beef taken from the rib section of the cow, specifically from the plate or brisket area. They consist of meat and bone, with a generous layer of flavourful fat and connective tissue. Short ribs are known for their rich, beefy flavour and succulent, tender texture when cooked properly.
Short ribs are often braised or slow-cooked to break down the tough connective tissue and render the meat tender and juicy, but they can also be grilled, smoked or roasted. Short ribs are a popular choice for hearty, comforting dishes like beef stew, braised short ribs, or Korean-style barbecue.

So delicious, with the meat just melting in your mouth. Never tasted short rib like it with so much meat on. Definitely buying again.
Characteristics: Rich marbling and tough texture, require low and slow cooking to become tender and juicy
Best Cooking Methods: Hob
Seasoning: Season with salt and pepper
Cooking: Sear the ribs in a pot over a high heat. Place the seared ribs into the pot with whatever sauce or stew you are making and bring the mixture up to a boil. Lower the heat, cover with a lid and cook for a couple of hours until the meat is fall-off-the-bone tender.
Slow Cooker: Alternatively, brown the ribs on a skillet then combine with whatever other ingredients you’re using in the slow cooker. Cook on low for 8-10 hours, or on high for 4-6 hours
General Tips:
Resting: Always let steaks rest after cooking to allow the juices to redistribute.
Doneness: Use a meat thermometer to check doneness:
Rare: 49-52°C
Medium-Rare: 54-57°C
Medium: 60-63°C
Medium-Well: 65-68°C
Well-Done: 70°C and above
Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.
