Skirt steak is a versatile cut of beef known for its robust taste and coarse texture. It's taken from the plate section of the cow, specifically from the diaphragm muscle. Skirt steak is characterised by its long, flat shape and prominent grain.
Due to its coarse texture, skirt steak is best when cooked quickly over high heat to medium-rare or medium. It's ideal for grilling or pan-searing, as these methods help to develop a delicious char on the outside while keeping the inside tender and juicy.
Skirt steak is popular in many cuisines around the world and is often used in dishes like fajitas, tacos, stir-fries, and steak salads. Its rich beefy flavour pairs well with bold seasonings and marinades.

Characteristics: Rich flavour and coarse texture. Best cooked quickly at a high temperature and sliced thinly against the grain
Best Cooking Methods: Grilled or Pan-Seared
Seasoning: Season with salt and pepper, or marinate for 30 minutes to a few hours (if using marinade)
Preheat: Preheat grill or skillet to high heat
Cooking: Grill or panfry for 2-3 minutes per side for medium rare (avoid overcooking, as skirt steak can become tough)
Slicing: Rest for 5-10 minutes, then slice thinly against the grain.
General Tips:
Resting: Always let steaks rest after cooking to allow the juices to redistribute.
Doneness: Use a meat thermometer to check doneness:
Rare: 49-52°C
Medium-Rare: 54-57°C
Medium: 60-63°C
Medium-Well: 65-68°C
Well-Done: 70°C and above
Searing: For a great crust, ensure the meat is dry and the cooking surface is very hot.
