Spicy Tortilla Soup

On a cold day, nothing beats a hot spicy soup to knock the socks off winter colds & the chilly weather! The soup can be as spicy as you like, simply adjust the chilli powder & jalapeno quantities to suit your taste.
Ingredients
1 tbsp olive oil
1 large onion
1-2 tbsp hot chilli powder
1 tin chopped tomatoes
1 litre turkey stock
1 tin sweetcorn
1 tin black beans, drained
1 jar jalapeno peppers
Leftover Copas turkey or Thoughtful Producer chicken, shredded
4 spring onions, sliced
1 avocado, sliced
Soured cream
1 bag of tortilla chips
Cheddar cheese to serve
Method
Heat oil in a large saucepan, add diced onion & soften. Add the chilli powder & stir through.
Add the chopped tomatoes followed by a dash of stock, stir & allow to simmer for 2-3 minutes. As the mixture begins to boil, add the sweetcorn black beans and jalapenos followed by a further dash of stock. Continue to boil for 3 minutes.
Add the turkey and remaining stock to the soup & simmer for 5 minutes.
Serve the soup with the spring onions, avocado & soured cream. Top with tortilla chips & a good grating of cheddar cheese.
