Cooking your Copas Turkey

Our user friendly digital tools and easy steps below will make cooking your Copas Turkey a doddle!
Use our handy our Christmas Day Planner to work out when to prepare and cook your turkeys and trimmings.
Pre-heat your oven to 200’C and cook your Copas Turkey breast side down for the determined cooking time allowing 30-60 minutes for resting.
30 minutes before the cooking time is over, remove your Turkey from the oven. Remove foil if you’ve used it and using Poultry Forks, flip the bird over so that’s it’s breast side up, draining some of the juices in the process.
Turn your oven to 180’C and return your Turkey to the oven for the remaining cooking time, keeping an eye on your pop up timer (included with our birds). This will pop when the Turkey is cooked or if you’re using a meat thermometer, you’re looking for an internal temperature of 65-68’C on the thickest part of the breast.
TOM’S TOP TIP: With 30 minutes of cooking time left, add 500ml of water to the tray to lift any brown bits, ready to make a delicious turkey gravy with the leftover juices.
Once you’re pop-up timer has popped or it has reached 68’c remove the turkey from the oven, (it will continue to cook out of the oven before eventually stating to cool. Allow the Turkey to rest on the board while you finish prepping and cooking your gravy, stuffing and all your other trimmings.
TOM’S TOP TIP: 1. initially let the turkey rest in your roasting tray to capture all the juices before transferring to a carving board. 2. Prop up one end of the carving board with a rolled up tea towel to ensure the juices drain in the right direction.
