Brussels Sprouts That’ll Steal the Show This Christmas

Brussels sprouts have always had a special place on my Christmas dinner plate. Whether you like to stick to the classics or fancy trying something a bit different, these little green gems deserve to be centre stage at your festive meal. They’re full of flavour, easy to jazz up, and go brilliantly alongside a generous helping of Christmas turkey.
Love them or not, I genuinely believe Brussels sprouts can be transformed into something really tasty with the right recipe. From crisp and golden to rich and creamy, they’re surprisingly versatile and complement any meat you’re serving.
Here are some of my favourite ways to prepare them, whether you’re after something traditional or want to try a fresh twist this Christmas.
Classic Roasted Brussels Sprouts
You really can’t go wrong with roasting, it’s quick, simple, and brings out their natural sweetness.
- Trim and halve your sprouts.
- Give them a good toss in olive oil, sea salt, and a pinch of black pepper.
- Roast in a preheated oven at 200°C (fan 180°C) for around 20–25 minutes, shaking the tray halfway through.
They come out crispy on the outside, tender on the inside, just the way they should be. Perfect served with plenty of gravy and slices of Christmas turkey.
Brussels Sprouts with Cranberries
This colourful dish is a lovely mix of sweet, tangy, and earthy flavours, ideal for brightening up your Christmas feast.
- Sauté halved sprouts gently in butter until they start to brown.
- Stir in a handful of fresh or dried cranberries and a splash of balsamic vinegar.
- Cook until the sprouts are tender and the cranberries have softened.
It’s a pretty addition to your plate and works beautifully with all the trimmings.
Sautéed Sprouts with Toasted Nuts
If you want to add a bit of crunch and elegance, this recipe is a winner.
- Toast some chopped walnuts or pecans in a dry pan until fragrant, then set aside.
- Thinly slice your sprouts and sauté them in butter or olive oil until lightly caramelised.
- Toss the nuts back in with a drizzle of honey and a squeeze of fresh lemon juice.
Simple, tasty, and with a lovely mix of textures, it pairs wonderfully with any roast dinner.
Creamy Brussels Sprouts Gratin
For something a little indulgent, this creamy gratin is a real crowd-pleaser.
- Blanch halved sprouts in boiling water for a few minutes, then drain well.
- Mix double cream with grated Gruyère or mature Cheddar, crushed garlic, and a pinch of nutmeg.
- Layer the sprouts in a baking dish, pour over the creamy sauce, and top with extra cheese and breadcrumbs.
- Bake until golden, bubbling, and irresistible.
This one’s a perfect partner to your Christmas turkey or any chosen meat and disappears fast at the table.
Sprout & Pear Salad
Sometimes, a fresh, crunchy salad is just what you need alongside a hearty Christmas feast.
- Finely shred raw sprouts and slice a couple of ripe pears.
- Toss with crumbled feta cheese and toasted pumpkin seeds.
- Whisk together olive oil, lemon juice, Dijon mustard, and a touch of honey for the dressing.
This salad is light, refreshing, and a great balance to richer dishes on your plate.
Balsamic-Glazed Brussels Sprouts
Even those who usually steer clear of sprouts will be won over by this sticky, sweet glaze.
- Roast halved sprouts until almost tender and beginning to brown.
- Meanwhile, gently reduce balsamic vinegar with a spoonful of honey until thick and syrupy.
- Drizzle the glaze over the sprouts and pop them back in the oven for a few minutes.
The result? Gorgeous, caramelised sprouts bursting with flavour.
