Product Description
For those who want something a little smaller we have our bronze crowns, a whole turkey but with legs & dark meat removed. The same delicious award-winning free range whole bronze turkey with plenty of juicy meat and a rich traditional flavour. Our turkeys truly are the cream of the coop, free range, hand plucked and game hung for two weeks.
We choose bronze breed turkeys for their award-winning flavour and texture, but this does mean that sometimes their feather stubs are visible. Our birds are dry plucked by hand, we don’t blast them with water, so you might find a few more feather stubs than on commercial turkeys, but this is normal. Please do not spend time pulling these out as most will burn off during cooking, and those that don’t are much easier to remove once the bird comes out of the oven.

Cooking Instructions
- Remove your turkey from fridge & place in a roasting pan at room temperature for as long as comfortable with. It saves cooking time and oven energy, preheat oven to 180°C / 160°C Fan / Gas 4.
- Remove trussing band and season your bird liberally with salt inside & out. Insert Pop-Up Timer into the thickest part of the breast.
- Place in oven at 180°C for approximately 20 minutes per kg.
- To get the gravy going… Approx. 20-30 mins before end of cook add 600ml-1000ml (depending on size of roasting tray) to roasting pan. This lifts the gnarly bits, makes a tasty jus and helps clean the pan.
- As soon as thickest part of turkey breast hits 68°C or the timer pops, take the turkey out of oven to rest. The oven is now free for roast potatoes!
- Leave turkey to rest for up to 1 hour uncovered. Minimum 30 minutes. Your turkey will continue to cook with the residual heat but not overcook. Don’t cover if you want crispy skin! (Tom Copas doesn’t cover his turkey!).
- Turkey tips: Keep it simple. No need to flip your bird. No need to baste a Copas turkey. No need to cover with foil.

This is about my 28th consecutive year buying a Copas turkey and I wouldn’t buy anything else. At first I bought through my butcher until he retired then I started buying directly from you and having it delivered. The whole process is so straightforward and stress free and I’ve never been let down. I followed your simple instructions and as usual the turkey was delicious and moist, not only for the main event but over the next couple of days as we ate it cold. My daughter is now a customer too!

There's only one Copas
Consistently over the years the best Christmas turkey, full of flavour and moist. It served on Christmas Day and thereafter in copious turkey and ham pie mixes frozen for the year to come. Well done for a superb product in an age of mediocrity.

As in previous purchases, excellent quality and taste. Good cooking instructions and helpful pop up timer deliver a great roast turkey. 3.7kg was enough for Xmas day for 4, Boxing day buffet and turkey pithivier.

The crown was easy to cook and to carve. Had a good amount of meat in the crown. Have had a Peachcroft crown for years. In the part Peachcroft have supplied a crown a bit heavier than the ordered weight, bur this was exact. But that is what I ordered. Also, this was free range.
