Product Description

For those who want something a little smaller we have our bronze crowns, a whole turkey but with legs & dark meat removed. The same delicious award-winning free range whole bronze turkey with plenty of juicy meat and a rich traditional flavour. Our turkeys truly are the cream of the coop, free range, hand plucked and game hung for two weeks.

We choose bronze breed turkeys for their award-winning flavour and texture, but this does mean that sometimes their feather stubs are visible. Our birds are dry plucked by hand, we don’t blast them with water, so you might find a few more feather stubs than on commercial turkeys, but this is normal. Please do not spend time pulling these out as most will burn off during cooking, and those that don’t are much easier to remove once the bird comes out of the oven.

Each bird comes boxed with giblets, recipe leaflet & handy pop-up timer.

Cooking Instructions

  • Remove your turkey from fridge & place in a roasting pan at room temperature for as long as comfortable with. It saves cooking time and oven energy, preheat oven to 180°C / 160°C Fan / Gas 4.
  • Remove trussing band and season your bird liberally with salt inside & out. Insert Pop-Up Timer into the thickest part of the breast.
  • Place in oven at 180°C for approximately 20 minutes per kg.
  • To get the gravy going… Approx. 20-30 mins before end of cook add 600ml-1000ml (depending on size of roasting tray) to roasting pan. This lifts the gnarly bits, makes a tasty jus and helps clean the pan.
  • As soon as thickest part of turkey breast hits 68°C or the timer pops, take the turkey out of oven to rest. The oven is now free for roast potatoes!
  • Leave turkey to rest for up to 1 hour uncovered. Minimum 30 minutes. Your turkey will continue to cook with the residual heat but not overcook. Don’t cover if you want crispy skin! (Tom Copas doesn’t cover his turkey!).
  • Turkey tips: Keep it simple. No need to flip your bird. No need to baste a Copas turkey. No need to cover with foil.

    My first but certainly not my last, probably the finest turkey meat I’ve ever tasted in my life, beautifully cooked by my substantial other and tasted as good on Boxing Day when carved cold, not all crumbly like other brands. When can I order this years?

    Lovely, moist, tasty turkey, was a little disappointed with the amount of quills left in the skin this year - took me an hour with tweezers to get the worst of them out. Have not had this in previous years though, so maybe a one-off.

    Ordered a small turkey crown during the summer as we were meant to be four and then moved to seven in early December. Considered moving to a medium but it was fine for seven with leftovers for Boxing Day and then a turkey pithivier. Tasted excellent and cooked well, with the accompanying pop up timer helping and the good instructions. Also had the very good turkey gravy. Will buy again.

    It was delicious. Only comment would be that it feeds probably max 10 people not 12-14.

    As ever the bird was very tasty but seemed smaller than in previous years. We thought that is was very expensive and would think twice about buying one in 2023. Appreciate that dealing with avian flu and all the consequences that go with that cannot have been easy or cheap.

    Just the two of us this year, so opted for a turkey crown. Quicker and easier to cook, but absolutely no flavour. Very little aroma as it was roasting and possibly the blandest turkey we’ve ever eaten. Disappointing.
