He comes from a strong heritage that has always been dedicated to the artisanal art of butchery. Previously working under his father before deciding to push his craftmanship and go it alone, Tom has gone from strength to strength and continues to grow his business year on year. He has become the life and sole of the area and is continually recognised for what he brings to the local area.

- Constantly improving: The Copas Team engage in a Kaizen approach to business (a Japanese business philosophy of continuous improvement of working practices) and always want to offer more to their customers. This includes offering cooking videos, using more sustainable crops, reducing carbon footprint and striving to have a more ethical approach to business. Each year the Copas family believe in challenging the old and implementing new and improved ways of working. Their goal each year is produce a turkey that does not just leave their customers satisfied but ecstatic.
