Product Description

We offer delicious award-winning free-range whole bronze turkeys that are packed with juicy meat and have a rich traditional flavour. Our turkeys are truly the best of the best, being free-range, hand-plucked, and game-hung for two weeks.

We select bronze breed turkeys for their award-winning flavour and texture, but this does mean that sometimes their feather stubs are visible. Our birds are dry-plucked by hand, and we do not blast them with water, so you might find a few more feather stubs than on commercial turkeys. However, this is completely normal. Please do not spend time pulling these out as most of them will burn off during cooking.

Each bird comes boxed with giblets, a recipe leaflet, and a handy pop-up timer.

Cooking Instructions

  • Remove your turkey from fridge & place in a roasting pan at room temperature for as long as comfortable with. It saves cooking time and oven energy, preheat oven to 180°C / 160°C Fan / Gas 4.
  • Remove trussing band and season your bird liberally with salt inside & out. Insert Pop-Up Timer into the thickest part of the breast.
  • Place in oven at 180°C for approximately 20 minutes per kg.
  • To get the gravy going… Approx. 20–30 mins before end of cook add 600ml–1000ml (depending on size of roasting tray) to roasting pan. This lifts the gnarly bits, makes a tasty jus and helps clean the pan.
  • As soon as thickest part of turkey breast hits 68°C or the timer pops, take the turkey out of oven to rest. The oven is now free for roast potatoes!
  • Leave turkey to rest for up to 1 hour uncovered. Minimum 30 minutes. Your turkey will continue to cook with the residual heat but not overcook. Don’t cover if you want crispy skin! (Tom Copas doesn’t cover his turkey!).
  • Turkey tips: Keep it simple. No need to flip your bird. No need to baste a Copas turkey. No need to cover with foil.

    This Turkey was the best ever! I followed your easy cooking instructions and it was really moist, even the breast, and lots of meat on it. Delicious . We walk past the turkeys in your fields all year so I know how well you keep them and how happy they are. . Thanks! Ps your chicken was great too!

    The Turkey was as delicious as ever however I have to mention the price. Was it 15% up on last year? Its been going up at quite a rate. I know we've had inflation but paying so much even for a fabulous bird even at Christmas is over the top now in my opinion. We nearly didn't get one.

    This was by far the best turkey I have ever cooked and eaten. Big family all said the same, the meat was so tender, tasty and moist. I will never buy my turkeys from anywhere else again!

    BUT when removing the bird from its travel box when transferring to the fridge we were disappointed to see it wasn’t bagged such that it couldn’t leak fluids
