Product Description

We offer delicious award-winning free-range whole bronze turkeys that are packed with juicy meat and have a rich traditional flavour. Our turkeys are truly the best of the best, being free-range, hand-plucked, and game-hung for two weeks.

We select bronze breed turkeys for their award-winning flavour and texture, but this does mean that sometimes their feather stubs are visible. Our birds are dry-plucked by hand, and we do not blast them with water, so you might find a few more feather stubs than on commercial turkeys. However, this is completely normal. Please do not spend time pulling these out as most of them will burn off during cooking.

Each bird comes boxed with giblets, a recipe leaflet, and a handy pop-up timer.

Cooking Instructions

  • Remove your turkey from fridge & place in a roasting pan at room temperature for as long as comfortable with. It saves cooking time and oven energy, preheat oven to 180°C / 160°C Fan / Gas 4.
  • Remove trussing band and season your bird liberally with salt inside & out. Insert Pop-Up Timer into the thickest part of the breast.
  • Place in oven at 180°C for approximately 20 minutes per kg.
  • To get the gravy going… Approx. 20–30 mins before end of cook add 600ml–1000ml (depending on size of roasting tray) to roasting pan. This lifts the gnarly bits, makes a tasty jus and helps clean the pan.
  • As soon as thickest part of turkey breast hits 68°C or the timer pops, take the turkey out of oven to rest. The oven is now free for roast potatoes!
  • Leave turkey to rest for up to 1 hour uncovered. Minimum 30 minutes. Your turkey will continue to cook with the residual heat but not overcook. Don’t cover if you want crispy skin! (Tom Copas doesn’t cover his turkey!).
  • Turkey tips: Keep it simple. No need to flip your bird. No need to baste a Copas turkey. No need to cover with foil.

    Free range turkey for Christmas

    This was the first time we purchased a turkey for Christmas (normally have chicken). We purchased a 6kg bird as planned to butcher the meat and store some in the freezer. We ended up with a whole breast (about 1.5kg) and the carcass which was boiled for a stock. On Christmas Day, the breast (wrapped in bacon and seasoned) was slow cooked in the oven and we used some of the stock to keep the meat moist. All the giblets were used for either the stock or stuffing (which was made fresh with sausage meat). Three quarters of the way through cooking, the bacon was removed so the skin would crisp. When the breast was cooked (about 2-2.5 hours), it was removed from the oven and rested before carving for about 15 minutes. The cooking juices/stock were used to make the gravy. The meat was very easy to carve and was tender and moist. When we tasted the meat, it was superb, so tender, moist and not dry. It was full of flavour however not heavy. Because of how we prepared the bird, there was also no wastage. We had an excellent Christmas Day lunch and can now enjoy the turkey throughout 2021 as there is a stock in the freezer. An excellent purchase and very happy. Would also like to add, we made the purchase via the telephone initially and we were advised there are normally long queues for collection. Despite all the restrictions, and yes there was a queue, however everything was managed and well organised. The collection point was very quick and there was enough staff on hand. The bird was well wrapped in a box which was placed in the car boot for us. We did not have to get out of the car. I know there have been some negative comments in the past about the queues but for us it was not an issue and considering all what has happened recently, we are very pleased with the service we received.     This year, in terms of prepping the turkey, I had very little work to do getting rid of remaining feather quills. The turkey was lovely and flavoursome too.

    I always buy my turkey from the farm and traditionally although the bird is very clean on the inside but it usually has a lot of quills that need to be removed, as we are a family that likes to eat the skin on the bird. This year it was a turkey heaven sent. So easy to clean and prepare. Thank you to whoever decided to improve the plucking.

    Delicious meat - over fatty

    Slightly disappointed by how fatty it was under the skin. Never experienced this before from Butchers turkey. Delicious flavour, brilliant thermometer gadget included. Lovely gesture of gravy spatula, never knew we needed one and now using for every meal. Thank you. REPLY: Thank you for the review. The layer of fat is what gives our birds their award-winning flavour and ease of cooking. Hopefully it melted down during the cooking process.

    Absolutely delicious (as ever). Full of flavour and really juicy. Thank you also for the extra meat on there this year - made for a whole extra meal! And also for the really well organised contact free collection process. It must have been horrible for you guys in that rain, but was very quick and easy from where I was sitting!
