Fragrant Turkey Noodle Soup: A Comforting Way to Transform Leftovers

This Fragrant Turkey Noodle Soup is a perfect mix of warmth and flavour, just the thing for cosy evenings at home. When using simple ingredients, you can create a bowl that’s both nourishing and a little bit indulgent. This recipe is light on fuss but big on taste, and I love how the miso broth and Chinese five-spice bring a gentle, aromatic lift to the leftover turkey we all tend to have after a roast.

Fragrant Turkey Noodle Soup

Ingredients:

  • 500g leftover free-range turkey meat – shredded or diced

  • 500g egg noodles

  • 1 inch of ginger, finely grated

  • 1 tsp Chinese five spice

  • 2 tbsp soy sauce

  • Miso broth: 1L vegetable stock & 3 tablespoons white miso paste

  • 1 small bunch of coriander, roughly chopped to serve

  • 1 red chilli, de-seeded and finely chopped. You can use more (or leave the seeds in) if you prefer more spice

  • 1 red pepper, finely sliced

  • 1 bunch spring onions, sliced on a diagonal

  • 1 tsp Sunflower oil

Method: 

  1. Bring a large saucepan of water to the boil and add the noodles. Cook for 6-8 minutes or until just soft. Remove from the heat, drain and rinse under cold water. Set aside.

  2. In another large saucepan, make your miso broth. Pour in the stock and add the miso paste, stir until combined and allow to simmer over a low heat.

  3. In a frying pan or wok, heat the oil over a low heat, add the ginger, chilli, peppers, free-range turkey, spring onion, and Chinese five spice. Fry gently for a couple of minutes.

  4. Remove all items from the heat, combine the broth, noodles and other ingredients, add the soy sauce, sprinkle over the coriander and serve.

    Preparation time: 10 minutes
    Cooking Time: 20 minutes
    Serves: 4
