Sarah Leverton's Spicy Turkey


Serves 4. Freezes well.

2 oz. Butter/margarine/oil
1 onion - diced
1 clove garlic - crushed
2 leeks - sliced
4 rashers bacon or diced ham
3oz. Mushrooms
2 teaspoons curry powder
4 tablespoons plain flour (or substitute wheat free plain flour)
¾ pint chicken stock
¼ pint milk
2 tablespoons raisins
1¼ lb. chopped cooked Copas turkey or Thoughtful Producer chicken
Seasoning to taste


Fry onion, garlic, leeks & bacon until soft.
Add mushrooms; cook.
Stir in curry powder & flour off the heat, then cook for 2 minutes.
Gradually stir in the stock & milk. Bring to the boil & simmer for 1 minute.
Add raisins & turkey or chicken.
Taste; season as necessary. Add a drop of boiling water if too thick.
Simmer for approx. 15 minutes until heated through.
Serve with rice.
