The salmon come from fresh, fast-flowing waters and are fed on a natural diet that reflects their choice in the wild. This means a better texture and taste - before the traditional smoking process begins. Only the best, carefully selected fish are used in the smoking process.

The smoking process is bespoke and still remains a family secret, but there are basically two stages. The fish are prepared for the kiln by salting, at this stage the freshest fish are used and careful handling to preserve the texture and appearance is imperative. During stage two the salmon are placed in the kiln where smoke from the burning shavings of oak casks caress and penetrate the salmon flesh to give that special award winning flavour.

Very nice smoked salmon. You could taste the salmon - it was not overly salty like some I have tasted. I would order again.

Perfect! We enjoyed every bite of it and literally flawless. I think that taste-wise, it is very close to a wild one.

Beautiful Scottish salmon. Lovely flavour. Only problem was it didn't last long, so moreish.

Delicious meaty smoky salmon. Tastes luxurious and rich and perfect for Christmas. Has no oily ness like over farmed mass produced salmon. Honestly the nicest I’ve had and I buy it from Copas every year.

Click & Collect from one of our express collection points Church Farm, Waltham St Lawerence Walled Garden, West Wycombe Peach Croft Farm, Abingdon Nationwide delivery by our nominated couriers on 22nd December. Your order will be packed in recyclable insulated packaging and will be dispatched on a pre 2pm next day service.
