At Copas Farm Shop, we’ve been rearing some of Britain’s finest turkeys on our Berkshire farm in Cookham since 1957. Over that time, we’ve developed a real appreciation for the land we farm, the changing seasons, and the botanicals that grow all around us. It was that connection, along with a touch of curiosity, that led us to create our own small batch gin.

We’re pleased to offer our Copas Small Batch Rosemary Gin, available year-round. This award-winning gin is produced in collaboration with Griffiths Brothers in Penn, and is something we are genuinely proud to share.

About our Copas Small Batch Rosemary Gin

The rosemary used in our gin is grown here on the farm. It’s the same rosemary we use alongside our Christmas turkeys each year, so it felt natural to capture that flavour and character in a spirit of its own.

Bottled at 42% vol in a 75cl bottle, this is a full-bodied gin with real depth and complexity. It works beautifully in a classic gin and tonic, but also holds its own in a range of cocktails.

Botanicals include: rosemary, juniper, coriander, angelica, grapefruit, lemon, liquorice and grains of paradise.

Due to the natural oils in the rosemary, the gin may appear slightly cloudy in the bottle. This is completely normal. Once tonic is added, it clears beautifully in the glass.

Serving Suggestions

While this gin is excellent served simply with tonic, we’ve created a selection of cocktails that bring out its herbal and citrus character. Whether you’re entertaining guests or enjoying a quiet evening at home, we hope you find a favourite among them.

The Cocktails

The Copas Special

Our signature serve

This is our house cocktail, fresh, fragrant and well balanced. Elderflower softens the rosemary, grapefruit adds brightness, and cucumber brings a clean, cooling finish.

Ingredients

  • 50ml Copas Small Batch Rosemary Gin
  • 20ml elderflower cordial
  • Juice of ½ pink grapefruit
  • 150ml premium tonic water
  • 3 slices cucumber
  • Fresh rosemary sprig
  • Ice

Method
Fill a large glass with ice.
Lightly bruise the cucumber in a shaker.
Add gin, elderflower cordial and grapefruit juice with ice and shake.
Strain into the glass.
Top with tonic water.
Garnish with cucumber, grapefruit and rosemary.

Berkshire Garden G&T

A refined classic

Sometimes the simplest serve is the best. This G&T lets the gin speak for itself, with grapefruit and rosemary echoing the botanicals already in the spirit.

Ingredients

Method
Fill a large glass with ice.
Add gin and allow to chill.
Add grapefruit and rosemary.
Top with tonic water and stir gently once.

Rosemary & Honey Sour

Soft, citrus-led and well balanced

A classic sour with a Copas twist. Honey adds gentle sweetness, lemon keeps it bright, and rosemary brings depth. Egg white can be added for a smooth, silky finish.

Ingredients

  • 50ml Copas Rosemary Gin
  • 25ml lemon juice
  • 20ml honey syrup (equal parts honey and warm water)
  • 1 egg white (optional)
  • A few drops of Angostura bitters
  • Ice

Method
Dry shake all ingredients if using egg white.
Add ice and shake again until well chilled.
Strain into a coupe glass.
Finish with bitters and garnish with lemon and rosemary.

Winter Spice & Rosemary Negroni

Rich, warming and ideal for colder evenings

A seasonal take on the classic Negroni. The rosemary gin works beautifully with bitter Campari and sweet vermouth, while cinnamon adds a subtle warming note.

Ingredients

Method
Stir all ingredients over ice until well chilled.
Strain into a rocks glass over a large ice cube.
Express orange peel over the drink and add as garnish.
Finish with rosemary.
