Really delicious, separated crown and legs and cooked separately. Excellent quality, more interesting than chicken but not too gamey. A really good experience.

The Free Range Cockerel

Absolutely fantastic flavour. Lots of meat and very succulent. A Cockerel is always better than a small Turkey and more succulent. With a longer life than a chicken it comes up trumps.
1. Remove the chicken from the fridge 30 minutes before cooking. 2. Preheat the oven to 200C (180C Fan) 3. Season the chicken and put in a preheated tray for 20 mins. 4. Then reduce the temp down to 180C (160C Fan), and cook for a further 30 minutes per kg. 5. Check that the juices run clear at the end of time using a skewer to the thickest part of the thigh. 6. If the juices are not clear, cook for a further 10 minutes. 7. When cooked remove and rest for at least 15 minutes.
