Coronation Turkey Burgers: A Delicious Way to Transform Leftovers into Something Special

At Copas Farm Shop, we’ve always believed that nothing should go to waste, especially when it comes to our carefully reared meats. This is one of those recipes we come back to time and again: a simple yet considered way to turn leftover turkey into something a little more special. These burgers are tender and full of flavour, with the gentle warmth and subtle sweetness of our Coronation sauce bringing everything together beautifully.

Serves: 6

INGREDIENTS

• 1 Large Onion – Finely Diced
• 600g Leftover free-range Turkey
• 5tbsp Copas Coronation Sauce
• 60g Apricots – Finely chopped
• 50g Breadcrumbs
• 1 medium egg, lightly whisked
• 1 Large Bunch Parsley – roughly chopped
• 4tbsp Mayonnaise
• 6 Brioche buns
• Oil for frying
• Baby Gem Lettuce & Gherkins to serve
• Salt & Pepper to taste

METHOD:

1. Heat a little oil in a large frying pan, add the onion and cook until soft, set aside and leave to cool.
2. Shred the leftover turkey as finely as possible
3. Add the turkey, breadcrumbs and parsley to the cool onions and mix.
4. Season and add the egg and 3 tbsp of Coronation sauce. Mix.
5. Shape the mix into 6 burger patties, leave to chill in the fridge for at least 10 minutes.
6. In a clean bowl, mix 2 tbsp Coronation sauce and 4tbsp Mayonnaise and the finely chopped apricots.
7. Preheat the over to 200°C (fan 180°C, gas mark 6)
8. In the same frying pan used to cook the onions, heat a splash of oil over a medium heat, add the burgers and fry for 4 or 5 minutes on each side.
9. Transfer to a baking tray or oven-proof dish (if the frying pan isn’t already) and cook for another 10 minutes.
10. Remove from the oven and allow to rest for a couple of minutes.
11. On the bottom half of each bun, place some baby Gem lettuce, add the burger, and top with a dollop of the Coronation mayo. Add a couple of slices of gherkin to the top of the bun and serve.

We like to serve them with crisp fries and a fresh, crunchy coleslaw for a balanced, satisfying plate. With a little care and the right ingredients, even the simplest dishes feel special.
