BBQ Chicken Satay

A delectable barbecue recipe for chicken satay, using chicken thighs, with warm spices and peanut butter.
This is a very simple recipe that can be prepared the night before or the morning before you plan to cook them.
Serves 4.
Ingredients:
Chicken skewers:
* 500g Copas boneless chicken thighs
* 2 tablespoons yoghurt
* 1 tablespoon lime juice
* Coriander or parsley to serve
* Lime wedges
Satay sauce:
* 6 tablespoons crunchy peanut butter
* 2 tablespoons sweet chilli sauce
* 2 tablespoons lime juice
* 1 tablespoon brown sugar
* 2 teaspoons ground ginger
* 2 tablespoons soy sauce
Instructions:
1. Dice the chicken thighs into chunks, and thread onto 8 skewers. Place in a large container.
2. Mix all of the ingredients for the satay sauce.
3. Pour 1/4 of the satay sauce over the chicken skewers, ensuring they are evenly coated. Add the yoghurt to the satay sauce and the chicken.
4. Cover the chicken and place in the fridge for an hour. You can leave it in the fridge overnight too.
5. Cook the chicken skewers on the BBQ for 20 to 25 minutes until cooked through.
6. Serve the chicken satay skewers with the satay sauce, fresh coriander and lime wedges. We like it with pilau rice and grilled vegetable skewers.
